Absolutely!
•What will the final product look like—text? images? size? format? length?
For this class, I want to finish one chapter of the book. There will be 1 or 2 images for the story itself (looking forward to learning about options for images), probably text only for the theory (perhaps graphs which I would do in excel), and text and JPEGS of worksheet with links to PDFs online for the lesson activities.
•How much have I already written? How much is left to do?
The short story is written. The theory is written but scattered here and there in various blog posts (which might actually mean, not written yet). The activities are about 50% done.
•How much of the thinking/planning have I already done? How much is left to do?
For the chapter, most of what I want to do is planned out as far as content. Images, style, etc., is not something I have a clear picture of yet.
•When do I plan to write?
I've got an hour commute from and to work. That is going to be my writing time.

You can have a graph or a chart as long as it’s an image. The very easiest way would be to create what you want in Excel or whatever and then just take a screenshot.
